Whole30 Turkey Stroganoff
I had ground turkey and mushrooms in the fridge so I decided to make a rendition of Beef stroganoff with ground turkey. This dish always reminds me of high school for some reason and I love to make it.
Equipment needed:
Pan - I love this Always Pan
Food Processor - OXO manual processor to quickly mince onions
Ingredients
Meat:
1 lb of ground turkey or ground beef (I prefer ground turkey)
Produce:
12-16 oz sliced mushrooms
1 yellow onion, minced/diced (I didn’t have onion so I used 1 tsp of onion powder)
1 tsp minced garlic
Pantry:
1 tsp yellow mustard
1 cup of chicken both (use beef if using ground beef)
3/4 cup of coconut cream
1 1/2 tsp apple cider vinegar
1 tbsp olive oil
Oils/Spices:
2 tbsp avocado oil (can use olive or coconut oil as well)
3 tbsp ghee
1 tbsp arrowroot powder
2 tbsp water
1/4 tsp garlic powder
salt & pepper to taste
Instructions:
1) Heat 1 tbsp of oil on medium-high heat and cook ground meat and yellow onion. Cook until meat is brown (I didn’t have yellow onion so I just put a tsp of onion powder)
2) Add in 12 - 16 oz of sliced mushrooms and 3 tbsp ghee to the meat mixture and cook until softened (3 - 5 minutes)
3) Stir in 1 tsp minced garlic until fragrant and stir in 1 cup of chicken broth and bring to boil
4) As the meat mixture is cooking, in a separate bowl mix 2 tbsp water with 1 tbsp arrowroot powder and pour into meat mixture once it reaches a boil. Stir constantly until thickened. About 1 - 2 minutes
5) Remove from heat and stir in 3/4 cup coconut cream until melted
6) Add 1 1/2 tsp apple cider vinegar, 1 tsp mustard, 1/4 tsp garlic powder and salt & pepper to taste
7) Serve with mashed potatoes or cauliflower
