Winter Melon Soup
My parents came over and brought me a giant winter melon (also known as ash gourd). According to Healthline, the fruit has laxative, diuretic and aphrodisiac properties. It’s also believed to provide health benefits ranging from increased energy levels and a sharper mind to smoother digestion and a lower risk of disease! So EAT UP!!
Ingredients
Shrimp mix:
15-20 raw shrimp (deveined, peeled and lightly minced)
1/2 tbsp @redboatfishsauce
1 tbsp @traderjoes coconut aminos
1 tsp minced garlic
1/4 tsp salt
1/8 tsp pepper
1/2 tbsp coconut oil
Soup mix:
1 giant winter melon (skin peeled, de-seeded & chopped up)
6 cups of water
1 tsp @wholesomesweet coconut sugar
1 tsp @traderjoes Unami mushroom seasoning
1 tsp @traderjoes vegan chicken-less seasoning
1/4 tsp salt
Instructions:
1. Marinate minced shrimp with fish sauce, coconut aminos, garlic, salt and pepper and set aside for 15-30 mins
2. In a medium pot over medium to high heat, heat coconut oil and sauté shrimp mixture until pink
3. Pour 6 cups of water into pot and let it boil
4. Add soup seasoning (sugar, mushroom, chicken-less seasoning) and stir
5. Add chopped winter melon
6. Once boiled, cover and turn off hit and let the melon cook for another 10-15 mins
7. Add salt to taste and serve!
