Flourless Avocado Brownies

 

I made these amazing brownies over the weekend and it was a huge HIT at our pool get together. I should have made two batches because they did not last long!

 
 

Equipment needed:
9x9 casserole baking dish
Food processor/blender
Parchment paper

Ingredients

2 eggs
1 ripe peeled & pitted avocado or 1/2 cup smashed
1/2 cup cocoa powder (I used Hershey’s special dark)
3/4 cup coconut sugar (use 1 cup if you want it sweeter)
1/4 cup almond butter
1 tsp baking powder
1 tsp vanilla extract
1/4 tsp salt
1/2 cup dark chocolate chips (1/4 C in brownie & 1/4 C sprinkle on top)
1/4 cup semi-sweet chocolate chips

Instructions:
1) Preheat over to 325 F & line 9x9 baking dish with parchment paper (trick is to spray dish with oil first so the paper stays down
2) In a food processor, combine the avocado (1/2 C), cocoa powder (1/2 C), 2 eggs, sugar (3/4 C), almond butter (1/4 C), baking powder (1 TSP), vanilla extract (1 TSP), and salt (1/4 TSP). DO NOT include chocolate chips yet
3) Blend ingredients together until smooth, you may need to pause and scrap some off the sides and continue blending
4) Fold in or pulse dark chocolate chips & semi-sweet chocolate chips (1/4 C each)
5) Pour batter into the prepared baking dish, smooth out for even baking and sprinkle the remaining dark chocolate chips (1/4 C) on top
6) Bake for 25-30 minutes and let it cool — it’s taste the best if it’s cooled completely for about 2 hours
