Easy Salmon (Whole30 friendly)
I love salmon and this is a very simple dish if you’re looking for something easy & delish! The salmon skin is pretty tasty & crispy too!
Equipment needed:
Air Fryer - 7 quarts air fryer
Pan - I love this Always Pan
Meat masher- I used a potato masher, but here’s one
Boiling pot
Ingredients
Meat:
2-4 salmon filets with skin on
Produce:
1 bag of small gold potatoes
2 tsp minced garlic (for mashed potatoes)
1 tsp minced garlic (for asparagus)
1 bag of frozen asparagus spears
lemon (for garnish)
Pantry:
1/3 cup coconut milk (mashed potatoes)
1/2 cup chicken or both broth (mashed potatoes)
2 tsp olive oil (salmon seasoning)
1/4 tsp garlic powder (salmon seasoning)
1 tbsp ghee (mashed potatoes)
1/2 tsp salt (mashed potatoes)
1/2 tsp salt (salmon seasoning)
3 tbsp salt (salmon salt water soak)
1/8 tsp paprika (salmon seasoning)
pepper to taste

Soak salmon filets in Himalayan salt water and pour ice over salmon and set aside while you prepare the side dishes
Quarter gold potatoes so they can evenly cook
In a large pot, boil potatoes for 25-30 minutes
While potatoes are boiling, pat dry salmon filet and season with olive oil, garlic powder, salt, pepper & paprika on both sides and place filets in air fryer basket skin side up
Cook salmon filets at 400 degrees for 7-10 mins items depending on thickness of filet
While salmon is cooking, finish making the mashed potatoes
Drain and add back to pot and mash potatoes with 2 tsp of garlic, 1/2 cup of chicken broth, 1/3 cup of coconut milk, 1 tbsp of olive oil/ghee, 1/2 tsp salt and 1/4 tsp of black pepper and set aside (add more salt to taste)
In a frying pan, sauté a splash of olive oil & 1 tsp minced garlic and add frozen asparagus spears to pan, sprinkle with salt and cook until warmed up
Remove salmon from air fryer and serve with mashed potatoes and asparagus
